Cranberry-Raisin Irish Soda Bread

Ingredients

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 3/4 cup sugar
  • 3 1/2 cups flour
  • 1 1/4 cups buttermilk
  • 1/4 cup melted butter
  • 2 eggs, slightly beaten
  • 2 tablespoons caraway seeds
  • 1 tablespoon black caraway seeds
  • 1 cup raisins
  • 1/2 cup dried cranberries

 

Preparation method

Prep: 25 mins     | Cook: 50 mins

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Add first 5 ingredients to food processor and pulse 3 times to sift.
  3. Add next three ingredients and mix till it comes to a ball. Mix in seeds, raisins, and cranberries. Knead into a ball and place into a well-greased pan. I like cast iron skillet 8-9 inches. Mark a cross on top and brush with more melted butter.
  4. Bake in the preheated oven until golden brown, 50 to 60 minutes.
