- Hickory chips, soaked
- 4 baking potatoes
- 1 tablespoon olive oil
- Salt and pepper
Prep: 10 mins | Cook: 1 hour 30 mins
- Preheat the smoker (or grill with smoker) for 30 minutes with charcoal (if needed) and hickory chips, per manufacturer’s instructions.
- Rub potatoes with olive oil and sprinkle with salt and pepper to taste. Place on the smoker grate.
- Close lid and smoke for 1 1/2 to 2 hours, until potatoes are tender. Serve.
