Roasted Pumpkin Fritters

Ingredients

1 peeled pumpkin, cut in wedges
150 g flour
½ tsp salt
2 tsp baking powder
2 medium eggs
3 clove(s) garlic
 some parsley
 some basil
 some oregano
oil for frying

Preparation Method

Cut the pumpkin into wedges and spread on a baking sheet. Sprinkle with some olive oil and roast at 180 for about 40 minutes turning over once.

Put roasted pumpkin with all other ingredients into a food processor and mash well together.

Heat oil in a frying pan and add scoops of the mash into the hot oil. Fry the fritters in batches until lightly browned.

Variation: You can add your own touch by adding different ingredients as crumbled feta, olives, zucchini, or try them sweet with cinnamon and sugar (then omit the garlic and the herbs).
